Makes 8 rolls

150ml milk
150ml water
450g wholemeal bread/strong flour
1/2 tsp salt
1 tsp sugar
1 tsp easy blend/ quick yeast

Method:
Place the flour in a bowl and add the salt, stirring well. Add the sugar and yeast on top. Combine water and milk in a jug and add most to the flour. Stir well. Add more water/milk until you get a soft dough. Turn out onto a lightly floured board. Knead until smooth and supple (20 mins or less). Place in a lightly oiled bowl at least twice its size and cover with a damp tea towel or lightly oiled cling film. Put in a warm place for 1 hour or until doubled in size.

Remove dough from bowl and place on lightly floured board. Knead gently a couple of times and then divide into 8 pieces. Shape each piece into a roll and place onto a lightly oiled baking sheet. Cover with a damp tea towel or lightly oiled cling film. Put in a warm place for 1/2 hour.

Preheat oven to 200C. Uncover rolls and place in the oven for 15-20 mins until hollow-sounding when tapped. Brush with milk or dust with flour before placing in oven, if you wish. Alternatively, top with cheese, sesame seeds or cornmeal or brush with olive oil or salted water or whatever suits the celebration before placing in oven.

Tip: If you have a breadmaker, place the ingredients into the machine in the order given by the manufacturer. Set to dough. When the cycle has finished, remove and shape according to the instructions above.
